The thing that always kept me from making potato wedges in the past is how long they took to make & how labor intensive they usually are. So since I like to really break things down & simplify things, I had to do that with these wedges. If I can find a way to make anything easier then I’m all for it.

20 Minute Potato Wedges are loaded with cheese, bacon & chives.
3 large russet potatoes
2 tbsp olive oil
1 cup shredded cheddar cheese
1/2 cup bacon bits or cooked & roughly chopped bacon
1/4 cup chives
salt/pepper to taste
Wash potatoes & cut each into 4 wedges
Cut out most of the inner part of the potato
Place potatoes in a shallow microwave safe dish & microwave uncovered 10 minutes (or until tender)
Remove & brush both sides of each wedge with olive oil & place on a baking sheet
Sprinkle with salt & pepper & top with cheese, bacon & chives
Broil in oven approx 5 minutes or until cheese is melted
